Sweet Melissa Sundays: Apple (Pear) Turnovers

I’m happy to report that it was another fabulous baking week for the SMS’ers, as we bake our way through Melissa Murphy’s Sweet Melissa Baking Book.  Tracey from Tracey’s Culinary Adventures selected Apple Turnovers for this week’s bake-along treat.  If you haven’t checked out Tracey’s blog, well, what are you waiting for?  Get to it!  Tracey is always posting yummy treats that make my mouth water.  Speaking of her yummy treats, you can find the recipe for these turnovers over at her blog!

In order to have a bit of my own culinary adventure, I decided to use pears in place of apples for this recipe.  I also switched up the caramel recipe.  The recipe calls for boiling 1/4 cup sugar with 2 TBS water.  I added 1/2 TBS of light corn syrup to this mixture.  Once it turned amber, I immediately added 2 TBS of heavy cream and whisked the mixture together.  I threw in my chopped pears and heated, as Melissa directed.  (I left out the remaining 2 TBS for which the recipe called.)

All I have to say is THANK YOU, TRACEY!  This recipe proved absolutely fabulous, and that was quite a pleasant surprise for me.  You see, I’m not a big fruit turnover fan—or, I wasn’t.  Tracey, you’ve made me realize that all these years, I’d just been tasting the wrong turnovers.  These turnovers are heavenl y: crunchy on the outside, soft on the inside, with a creamy ricotta and pear filling.  Divine!

Elyse these look great! Of course since we are one in the same when it comes to food I have assumed I am not a fruit turnover person, but since you have crossed over I bet I will too.

I love the flaky layers! I know what you mean, I'm not a big fruit turnover fan either, but I think it's because I've been eating the wrong ones too. After all this baking, have you noticed that the desserts that we used to buy don't taste the same anymore? I feel like I'm getting pickier and pickier.

Ahhh, those look really good. My husband and I used to eat turnovers for a weekend treat but it's been years. Wouldn't it be fun to have them again, and with pears? Thanks for a wonderful idea!

I only saw the Virginia Highlands (knowingly anyway) when I took a wrong turn getting to my friend's house and drove through there at night--at which point my kids started yelling "at" all of the residents (stores--we were on Highlands itself) about how Christmas was over and it was time to take the lights down! Yes we live in the boonies and yes I had to explain to them that in the city lots of stores and restaurants have lots of festive lights year-round.

Pears sound like a very interesting idea! I like all the changes you made to the caramel. I followed the directions exactly and didn't end up with much caramel flavor; I bet yours were delicious!

Your wonderful modifications were not in time for my baking of these, but rest assured I'm making notes in my cookbook and there will be copycat versions the next time I tackle this recipe. But first, please tell me that the caramel flavor carried through!(?) (I've subscribed to the comments to get your answer!! My caramel was so disappointing)

I haven't been much of a turnover kinda gal, but this recipe rocks!
Your photos are superb, my dear.
I have to be careful how often I bake, lest I become HUGE... but, I can see my boys devouring these...those skinny dudes. So not fair!

Wow, yours turned out really puffy and flaky. I like it! What a great trick on the caramel-part. My caramel seized (and later re-melted) after I added the apples. Will have to try your trick next time.
